I still cannot believe 3 years have passed since our little girl was born. It was almost 4 years ago we moved to WI from sunny North Carolina. A few days after we arrived here, just before Christmas a huge snow storm hit Wisconsin and the snow kept on mounting throughout that winter. In February I started a new job and within a few weeks at the new job I found out I was pregnant after being told by various doctors I would not be able to have more children. It certainly was shocking news to us all and suddenly I was worried about my job as last thing any company wants is to have a person pregnant not long after starting work. Thankfully everyone was very supportive of me at the company and to date I will ALWAYS be thankful for their support.
So our daughter was born exactly 3 years ago, a true Packers fan and I was lucky to have had my sister here with us for her birth. Today, three years later, she is developing into quite a cure little girl, VERY girly like (so much unlike myself and my teen) and she knew EXACTLY what type of cake she wanted... A princess cake. So after some online search I found the batter I wanted to try (it had to be vanilla as she does not care for chocolate) and the frosting to dress up the cake.
For the batter I used this recipe, which I would fully recommend and doubled it to have enough for the cake and some cupcakes. For the frosting I used this one, which also came out fantastic. Instead of using food colorant I used beet colorant I had made at home for the pink and turmeric for the yellow one. I did however buy the little sugar pearls to decorate the dress.
My husband did a beautiful job with the doll itself. I had bought tiny pink and yellow bows and he glue gunned them on the top of the doll as well as on her hair.
Now let me explain the the actual process. I bought a kit at Michaels and also used a normal 8" round cake pan.
I first placed the normal 8"inch round cake on top of a round platter then the dome over it. I then covered the bottom part of the cake with the yellow frosting. I allowed it to dry a tad then started working with the pink one and fully covered the dome and part of the yellow bottom as to create the dress. In this area I played with a small spatula as to create the "ruffle" effect on the dress. Truthfully I had no idea what i was doing, so I was learning what worked and did not as I was going along...
I filled a one of those cone bags with decoration top with the yellow frosting and added little "flowers all over the pink area and created some ruffles at the edges of the pink dress, then did the same with the pink frosting over the yellow parts.
Then I added those sparkle pearls in each of the so-called flowers I created and again switched the colors, pink on yellow and yellow on pink! And VOILÁ a home-made princess cake with all of the details of barbies and princesses I am a big fan of, but the smile on my daughter's face this morning made it all worthwhile!
