Tuesday Main Meals: Herb grilled chicken

As we are getting close to leave on vacation, I have been going through the fridge and see what I need to finish so not to have to throw food away. I had (and still have) quite a few herbs I needed to use, so  that is how this meal started.

INGREDIENTS

1 whole chicken (about 3.5 to 4 pounds)
8 tbsp of butter
juice from 1 lemon
1tbsp of chopped thyme
1tbsp of chopped cilantro
3 minced garlic cloves
salt & pepper (or dried chili peppers) to taste

DIRECTIONS

  1. Thirty minutes prior to grilling, create a paste with the butter, lemon juice,thyme, cilantro, garlic, salt and pepper
  2. Carefully add this paste under the chicken's skin without breaking it
  3. With the leftover of the paste place it inside the chicken
  4. Start up the grill, then cover the whole chicken in foil and place it over the grill breasts down for about 40 minutes
  5. As you remove the foil, make sure to keep its juices in a small saucepan and grill the whole chicken for an additional 15 minutes breasts down, then the last 15 minutes breasts up
  6. Meanwhile bring the saucepan to a low simmer
  7. Cut the chicken into 4 to 8 pieces and serve with the sauce over it

LOL... Acho que vais gostar da Cosmic Closet. Havia um restaurante ali mesmo ao lado com optima comida, nao sei se a melhor altura para isso. Vou tentar ver se descubro o nome.

Looks delicious! Some of the best ideas come from refrigerator menus! I bet that would taste delcious stuffed with my apple skins!
