As we are getting close to leave on vacation, I have been going through the fridge and see what I need to finish so not to have to throw food away. I had (and still have) quite a few herbs I needed to use, so that is how this meal started.
INGREDIENTS
1 whole chicken (about 3.5 to 4 pounds)8 tbsp of butter
juice from 1 lemon
1tbsp of chopped thyme
1tbsp of chopped cilantro
3 minced garlic cloves
salt & pepper (or dried chili peppers) to taste
DIRECTIONS
- Thirty minutes prior to grilling, create a paste with the butter, lemon juice,thyme, cilantro, garlic, salt and pepper
- Carefully add this paste under the chicken's skin without breaking it
- With the leftover of the paste place it inside the chicken
- Start up the grill, then cover the whole chicken in foil and place it over the grill breasts down for about 40 minutes
- As you remove the foil, make sure to keep its juices in a small saucepan and grill the whole chicken for an additional 15 minutes breasts down, then the last 15 minutes breasts up
- Meanwhile bring the saucepan to a low simmer
- Cut the chicken into 4 to 8 pieces and serve with the sauce over it

LOL... Acho que vais gostar da Cosmic Closet. Havia um restaurante ali mesmo ao lado com optima comida, nao sei se a melhor altura para isso. Vou tentar ver se descubro o nome.
