INGREDIENTS
24 oz of organic green beans1 minced onion
1 tbsp of minced parsley
a few parsley leaves for decoration
1 can of tuna
2 hard boiled eggs
1/2 cup of black olives
2 tbsp of extra version olive oil
1 tbsp of red wine vinegar
salt & pepper to taste
DIRECTIONS
- Bring water with a tad of salt to boil
- Add the green beans and cook them for about 7 minutes
- Mince onions and parsley
- In a small bowl add the olive oil, vinegar, minced onions and parsley and salt & pepper to taste and mix it all well
- Cut the hard boiled eggs in quarters and set them aside
- Strain the beans and place them in a large bowl, add the vinaigrette and lightly toss
- Add the tuna broken up into small pieces and lightly toss the salad again
- Decorate with the eggs, olives and parsley leaves
