INGREDIENTS
4 eggs2 cups of milk
4 tbsp of butter
2.5 lbs of frozen spinach
1/4 cup of flour
1 tsp of mustard
1 tsp of lemon juice
salt & pepper to taste
Oil for frying
for the breading:
fine breadcrumbs
beaten eggs
DIRECTIONS
- Boil the eggs for about 10 minutes
- Once cold remove the shells and cut them all in half
- Remove gently the egg yolks and place them in a small bowl and mash them with a fork to create a mooth paste
- Cook the spinach with a tad of salt for about 5 minutes
- Strain them completely and chop them
- In a small pan add the butter then the flour, mix well and once a paste is created add the milk at once
- After stirring it for a while and creating a smooth cream, add salt & pepper to taste, the mustard and the lemon juice
- Add the eggs and spinach into it and mix
- Fill the egg whites with this paste then pass them through the beaten eggs and breadcrumbs
- Fry them immediately in hot oil and serve hot or cold
