Ovos Verdes - Portuguese green eggs

Yet another recipe from my GrandMother. It is a different idea from the Deviled egg but JUST as good. They are pretty easy to make and usually people love them.

INGREDIENTS

4 eggs
2 cups of milk
4 tbsp of butter
2.5 lbs of frozen spinach
1/4 cup of flour
1 tsp of mustard
1 tsp of lemon juice
salt & pepper to taste
Oil for frying

for the breading:
fine breadcrumbs
beaten eggs

DIRECTIONS

  1. Boil the eggs for about 10 minutes
  2. Once cold remove the shells and cut them all in half
  3. Remove gently the egg yolks and place them in a small bowl and mash them with a fork to create a mooth paste
  4. Cook the spinach with a tad of salt for about 5 minutes
  5. Strain them completely and chop them
  6. In a small pan add the butter then the flour, mix well and once a paste is created add the milk at once
  7. After stirring it for a while and creating a smooth cream, add salt & pepper to taste, the mustard and the lemon juice
  8. Add the eggs and spinach into it and mix
  9. Fill the egg whites with this paste then pass them through the beaten eggs and breadcrumbs
  10. Fry them immediately in hot oil and serve hot or cold
