Meatless Mondays: Simple salad with leftovers from the fridge
Throughout the summer I have my teen here at home so I actually have to think of lunch when we have no leftovers from the night before. As we went out to some brand new friends' house last night and had an amazing pasta dish, this morning I suddenly realized I HAD to come up with something for lunch. So as I had some mixed green, shredded carrots, a tiny leftover of crumbled blue cheese as well as mozzarella shredded cheese, I decided for a salad. My teens's dance friend was also here so we all chipped in and cut up some tomatoes, onions and just prior to eating I warmed up some smoked salmon we had frozen from last time we had smoked meats and fish. So we all enjoyed a nice, healthy and light lunch. The teen's reactions? My daughter liked it and I am proud to say that after four bites the dancer kept on eating even though fish is not her thing. Give it a few more months and she will actually say she loves fish! I believe this will happen.

Congratulations on getting your dancer to eat fish!
Isn't creating something from what's in the fridge fun? I love doing it and my husband loves eating it the majority of the time. However, some times it's not so successful, but most times it's like cooking from scratch. Your salad sounds wonderful! I especially like the idea of the blue cheese.

@na america profunda: a razao e muito simples. Primeiro nao estao habituados como nos desde pequenos, segundo em geral so sabem o fried fish, que acaba por ter um gosto mais de peixe do que a maneira como nos em geral tratamos o peixe.
