Salsichas enroladas - Portuguese sausages rolled in cabbage

For my husband's 50th Birthday I asked him what he wanted to have for dinner and he asked me to make this recipe which is one of him favorite from Portugal along with Duck with Rice.
As we are also having some vegetarian family guests I also did a veggie version using the meatless Italian sausages. This is a winner amongst kids too. My tween absolutely loves this one and if there are any leftovers they are divided amongst her and her dad. The little one likes it all but the cabbage. I still always cut the cabbage REAL small and mix it with the rice but she figures out a way to remove every little piece.

INGREDIENTS

For the Sauce
Olive oil
8 plum tomatoes (diced)
1 large onion (chopped)
3 bay leaves
1 tbsp of oreganos
4 garlic cloves
1 chicken flavor knorr cube
1 cup of white wine

12 Mild Italian Sausages
2 cabbage heads

DIRECTIONS

  1. In a sauce pan add the olive oil and warm it up
  2. Add onions and garlic and sautee until golden color
  3. Add  tomatoes, herbs and knorr and stir for about 5 minutes
  4. Add the wine
  5. Let it simmer for about 30 minutes
  6. Meanwhile in a big pot add water and a little sea salt as well as the sausages
  7. When boiling, lower the heat and add the whole cabbages
  8. Keep on checking until the cabbage is fully cooked.
  9. Remove cabbage and sausages from the pot and carefully detach each cabbage leaf without breaking them.
  10. Roll each sausage in each cabbage leaf (use two if need be)
  11. Place them side by side in a oven-safe dish.
  12. Pour the tomato sauce over them and put in the oven for about 10 minutes at 375, then in low broil for about 7 minutes.
  13. Serve with plain rice.
