Peruvian Roast Chicken

I just tried this recipe and let me tell you, this is a winner and will be making it often. The flavors are simply wonderful, easy to make and so very tasty! There is something about making poultry for a Sunday night dinner and it almost feels as a tradition.

Rarely did I digress from the usual roasted recipe I grew up with, which is also wonderful, yet having had the chance to try something new was not only wonderful as a very nice change. Both my tween and toddler loved it as it was so very juicy. Here at home we are all dark meat eaters but we all ended up eating the breasts of this bird as they did not come out dry at all.

Of course my tween as usual will clean the bones as if there is not more meat on the plate. I am sure that if I would allow her to, she would try to eat the bones too. Never saw a child with a bone in her mouth for over 30 minutes. By the time she is done cleaning that bone  I do not think there is any further taste in there. A totally spotless bone finally reaches her plate!

chicken is not my favorite food but this recipe was sooooo worth it.
