Ervilhas Guisadas, versão vegetariana - Portuguese Pea stew , vegetarian version


This is yet another traditional Portuguese meal. If I am not mistaken more from Alentejo and the Algarve, the Southern parts of Portugal. It could not be any easier but is so very good and comforting for the winter months. This is always a hit with the kids even those who do not care for peas.  Perhaps it is the fun of breaking the egg and mixing everything together or simply the taste altogether.

INGREDIENTS

1 # of frozen peas
1 large onion chopped
4 cloves of garlic finely chopped
Olive oil
1 package of Tofurky Sweet Italian Sausages cut in 1" slices
1 package of Morningstar Farms Grillers Recipe Crumbles
1 package of Soyrizo cut in 1" slices
4 eggs
vegetable stock
2 bay leaves

DIRECTIONS

  1. In a bit pot add olive oil and golden the chopped onions and minced garlic
  2. Add all the meatless products and stir for about 5 minutes
  3. Add the vegetable stock then the peas and bay leaves
  4. Bring heat to low once it starts boiling and let it simmer for about 20 minutes
  5. Bring the heat back to medium and add the eggs, cracking one at the time so to pouch them in the stew
  6. Serve just as is or over some rice
