This is a typical Portuguese recipe I grew up with. Our family does not care much for chicken breast. We all go for the dark meat. So this is the perfect recipe to finish up that white meat no-one will eat. Another benefit is that the chicken breast of just on chicken will feed 4 to 5 people!
INGREDIENTS
1 tbsp of olive oilChicken Breast left over - all shredded into small pieces
6 eggs
1 medium onion cut in finely slices
3 cup of potato sticks
salt and pepper to taste
DIRECTIONS
- Warm the olive oil in a skillet
- Sautee the sliced onions until golden
- Add the chicken and turn it a few times mixing it well with the onions
- Beat the eggs (you can add a little milk if desired)
- Add the potato sticks onto the skillet
- Add the eggs and remove from heat
- Mix well with a wooden spatula until well cooked

Indeed it is. The ones we use back home are a little thinner, but these potato sticks are a pretty good substitute

Do you mean like 2 chicken breasts is enough for a family? I usually only cook for one but sometimes find store bought chicken breasts to be larger than needed, can this recipe store well?

Indeed the chicken breast from a whole chicken is enough to feed 4 to 5 people with this recipe. In terms of storing, unfortunately not. You can freeze past of the chicken breast and redo this recipe another time! Due to the fact it does have the potato sticks and eggs, when you store it, my experience is that it dries too much when you warm it up. Hope this helps!
I have just returned from Portugal were I had this wonderful meal and i believe this to be the recipe. I am saw the packets of potato strips while there but have never seem anything like it at home (Aust.) As I am not the most adventurous cook, do you think this dish could be made by pan frying shredded potato. I am really keen to to make it.

Whenever I have the time and patience I DO shred the potatoes then fry them. I never tried to pan fry them though. I use a deep frying as you want to make sure they do not stick to one another. Please let me know how it works out for you.
