Carne de Porco Assada - Portuguese Baked Pork Loin


There are various ways of doing a baked Pork loin in the oven. This is one that is pretty easy. Serve it with some homemade or organic mac and cheese mixed in with veggies and kids will be happy. 

INGREDIENTS
1 cup of olive oil
1 tbsp of paprika
4 cloves of minced garlic
1/2 cup of red wine
4 bay leaves
salt & pepper to taste
1 pork loin


DIRECTIONS
  1. Mix all of the seasonings together and add them to the pork loin
  2. Leave in marinated for at least 2 hours
  3. Put the Pork loin in a pyrex and in the oven at 375 for about 1 hour
  4. Turn it every 20 minutes
  5. Broil on low for another 20 minutes

    Pork loin is a great cut of meat. It takes on flavors well. People just nee to remember to take it out of the oven at 145 degrees so it doesn't get dry.
