OK, I know it sounds quite odd, but let me tell you... it is DELICIOUS. This is a recipe I read on Delicious Living magazine. Due to the fact that I was missing a few ingredients and that there was one part I did not agree with, I decided to change the recipe a little to my liking! Go figure.
INGREDIENTS
8 pieces of chicken (I used chicken 4 quarters and cut them in half)
4 tbsp dried herbes de Provence
1 teaspoon of rosemary
1 tbsp of chopped fresh cilantro
1/4 tsp sea salt
1/2 tsp ground pepper
2 tbsp of olive oil
3/4 cup of chicken broth
1/4 cup of balsamic vinegar
1/4 cup of maple syrup or honey (This time I used the honey)
1 ounce of dark chocolate chips
DIRECTIONS
- Put the chicken in a glass bowl and rub it with all of the herbs, salt and pepper and let it sit for about 10 minutes
- In a skillet add the olive oil and once warm, brown the chicken on both sides
- Add the chicken broth and bring it to a simmer over medium heat for about 15 minutes
- Cover with lid, bring heat to low and let it simmer for about 10 more minutes
- Meanwhile in a small saucepan, mix the balsamic vinegar and maple syrup (or honey) and cook on medium high until is it slightly bubbling
- Remove from heat and add the chocolate chips, stir it well until all chips are well dissolved
- Remove lid from chicken, increase heat to high and add the balsamic - chocolate sauce to the chicken
- Turn chicken periodically for about 7 minutes, then serve

You've got me interested when you said chocolate. I really must make this at least once.
That is certainly a combination I have not tried before. Can you give us a description of what it tastes like?
Country Mum, awesome question as that is what intrigued me to try out. It smelled very strongly of chocolate, yet it tasted a little sweet but not really of chocolate. The herbs were very potent perhaps a tiny bit too much. Next time I will try with just a little less. All in all though a very interesting and tasteful chicken.
